Ingredients
- 2 pcs Mi Urai Ori
- Make broth:
- 3 tbsp cooking oil
- 1 medium onion, roughly chopped
- 3 cloves garlic, minced
- 5 pcs shitake mushroom
- 400 g ground beef
- 3 tbsp white miso paste
- 1 litre water
- 1 tbsp dashi powder/chicken stock powder
- A handful bonito flakes/katsuobushi
- 3 tbsp soy sauce
- 3 tbsp mirin (optional)
- 2-3 tbsp chili powder (extra for more spicy)
- 250 ml milk
- Topping:
- Dried seaweed sheet/nori
- Soft boiled egg
- bokchoy, blanched
- Garnish:
- Green onion and sesame seeds
Instructions
- 1. Cook Mi Urai according to instructions on pack. Set aside.
- 2. Heat oil in a sauce pan over medium heat, add onion, garlic and shitake, cook until fragrant. Add the beef, cook until beef changed its color.
- 3. Add miso paste, stir well. Then pour water in, add dashi powder, bonito flakes, soy sauce, mirin and chili powder. Bring it simmer for about 15-30 minutes. Stir occasionally
- 4. Add milk, then bring to simmer again. Set aside.
- 5. To serve, place mi Urai and all the topping in a serving bowl, pour the broth in, garnish with green onion and sesame seed. Serve immediately
