
Shrimp Scampi Noodles

Ingredients
- 2 pcs Mi Urai Flat
- 75 ml olive oil
- 4 shallots, thinly sliced
- 6 cloves garlic, minced
- ½ tsp ground chilli
- 200 g prawns, peeled and leave tail intact
- ½ tsp ground black pepper
- 200 ml broth
- 2 ½ tbsp lemon juice
- 1 tsp grated lemon peel
- 5 tbsp unsalted butter
- 1 tsp salt
- ½ tsp sugar
- 1 lemon, slice into 6 wedges
- 1 tsbp minced parsley
Instructions
- 1. Cook Mi URAI Flat according to instructions on pack. Set aside.
- 2. Heat olive oil. Sauté shallots and garlic until fragrant.
- 3. Add ground chilli, prawns and black pepper. Cook until colour of prawns changes. Remove cooked prawns and set prawns aside.
- 4. Pour broth, add lemon juice and lemon peel. Bring to a boil.
- 5. Add unsalted butter, cook until butter melted.
- 6. Add Mi URAI Flat, season with salt and sugar. Stir well. Add prawns back in with parsley, mix well. Remove from heat and set aside.
- 7. Serve shrimp scampi noodles with lemon wedges.
