
Shrimp Salted Egg Noodles

Ingredients
- 2 pcs Mi URAI Flat
- 300 g large prawns, peeled and leave tails intact
- 1 lemon
- 4 cloves garlic, minced
- 3 bird’s eye chillies, chopped
- 1 stalk curry leaves, cleaned
- 3 salted egg, take the yolk and smoothened
- Salt, as needed
- 50 g butter
- 50 ml broth
- 1 stalk scallions, cut into ½ cm
Instructions
- 1. Cook Mi URAI according to instructions on pack. Set aside.
- 2. Marinate prawns with lemon juice. Set aside.
- 3. Heat butter. Sauté garlic until fragrant. Add in bird’s eye chillies and curry leaves, cook until fragrant.
- 4. Add marinated prawns, cook until prawns change colour.
- 5. Add smoothened salted egg yolks, mix well.
- 6. Pour broth, stir well. Season with salt.
- 7. Add Mi URAI, stir well. Remove from heat and serve with sprinkles of scallions.
