Mee Soup Sardine

Ingredients
- 2 pcs Mi Urai Pipih
- 400 g sardines (sardines in tomato sauce)
- 500 ml chicken stock
- 3 tbsp cooking oil
- 1 medium onion, roughly chopped
- 5 cloves garlic, chopped
- 1 inch ginger, sliced
- 1 inch galangal, crushed
- 1 stalk lemongrass, crushed
- 1 tbsp paprika powder
- 1 tbsp turmeric powder
- 2 tbsp chilli powder
- 1 tsp balacan
- 3 tbsp fish sauce
- Salt and pepper to taste
- Side dish:
- 3 soft boiled egg
- Garnish:
- Coriander leaves, lime and chili
Instructions
- 1. Cook Mi Urai according to instructions on pack. Set aside.
- 2. Heat oil in a sauce pan over medium heat, add onion and garlic, cook until onion soft then add ginger, galangal, lemongrass, cook until fragrant.
- 3. Add the spices, balacan, fish sauce and stir well.
- 4. Pour sardines including the sauce in, mash the fish then add the chicken stock. Season with salt and pepper. Bring to boil and let it simmer for at least 15 minutes, stir occasionally.
- 5. To serve, place mi Urai in a serving bowl, pour the soup, add the egg and garnish with chopped coriander, half lime and chili for extra heat. Serve immediately.
