Vietnamese Vermicelli Salad

Ingredients
- 2 pcs BIHUN JAGUNG URAI
- 200 g shrimp, boiled
- 1 pc cucumber, cut into matchsticks
- 1 pc carrot, cut into matchsticks
- 1 bunch fresh mint leaves
- 1 bunch fresh coriander leaves
- 50 g roasted cashews, roughly chopped
- For Dressing:
- 5 tbsp fish sauce
- 3 tbsp lime juice
- 2 tbsp drinking water
- 1 sdm gula | 1 tbsp sugar
- 1 clove garlic, finely chopped
- 1 red chilli, finely chopped
Instructions
- 1. Cook BIHUN JAGUNG URAI according to instructions on pack. Set aside.
- 2. In a small bowl, mix fish sauce, lime juice, sugar, garlic, water and chillies. Mix until sugar is dissolved.
- 3. In a serving bowl, arrange BIHUN JAGUNG URAI, boiled shrimp, cucumber, carrot, mint leaves and coriander leaves. Give it a toss until everything is mixed well.
- 4. Pour dressing on top of Bihun mix and sprinkle with chopped roasted cashews. Serve immediately.
